Ingredients
  

Chicken Marinade

  • 2 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber grated
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt to taste

Bowl Ingredients

  • 2 cups cooked rice or mixed greens
  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese

Instructions
 

Preparation

  • In a medium mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes in the refrigerator.
  • In another bowl, combine Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, lemon juice, olive oil, and salt. Mix well and refrigerate until ready to use.

Cooking

  • Preheat your grill or grill pan over medium heat. Cook the chicken for 6-8 minutes on each side or until fully cooked. Let rest before slicing.
  • While the chicken is grilling, prepare the rice or greens, and chop the vegetables. Set aside.
  • Place a portion of rice or greens in each bowl. Top with sliced grilled chicken, tomatoes, red onion, parsley, and feta. Add a dollop of tzatziki sauce on top.

Serving and Storage

  • Enjoy the chicken gyro bowls fresh, garnished with extra parsley if desired.
  • Store any leftover components separately in airtight containers in the fridge for up to 3 days. Reassemble when ready to eat.
