Equipment

  • 1 Large pot
  • 1 grill pan or baking sheet
  • 1 Mixing Bowl
  • 4 mason jars for serving

Ingredients

Salad Ingredients

  • 2 cups cooked rotini pasta
  • 2 cups cooked chicken breast diced
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup shaved Parmesan cheese
  • 1 cup croutons

Dressing Ingredients

  • 1/2 cup Caesar dressing
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce

Instructions

Preparation

  • Season the chicken breasts with salt, pepper, and garlic powder. Grill or bake at 375°F for 20-25 minutes until cooked through. Allow to rest before dicing.
  • Boil water in a large pot. Add salt and pasta. Cook until al dente, about 8-10 minutes. Drain and rinse with cold water.
  • In a small bowl, mix Caesar dressing, lemon juice, and Worcestershire sauce until well combined.

Assembly

  • In a large mixing bowl, combine cooked pasta, diced chicken, romaine lettuce, cherry tomatoes, and Parmesan cheese. Toss gently to mix.
  • Start by adding a couple of tablespoons of dressing to the bottom of each jar. Layer the pasta mixture, topping with croutons last to keep them crunchy.

Serving

  • When ready to eat, shake the jar to distribute the dressing and enjoy directly from the jar or transfer to a bowl.

Storage

  • Seal jars with lids and store in the refrigerator for up to 3 days. Add croutons just before serving to retain crunch.
