  • 6 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Toppings

  • 1 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni or turkey pepperoni
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F. Wash and prick the potatoes with a fork. Bake directly on the oven rack for 45 minutes to an hour until tender. Allow to cool slightly.
  • Cut each potato in half lengthwise and scoop out the flesh, leaving about a 1/4 inch of potato on the skin. Reserve the scooped potato for another use.
  • Brush both sides of the skins with olive oil and season with salt and pepper. Bake cut side down for 10 minutes until starting to crisp.
  • Flip the skins over. Spread pizza sauce on each, sprinkle with mozzarella, add pepperoni, and top with Parmesan.

Serving

  • Return to oven and bake for 10-15 minutes until cheese is melted and bubbly. Garnish with basil before serving.
  • Serve the pizza potato skins hot, accompanied by your choice of dips like marinara or ranch.

  • Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven before serving.
