  • 2 cups shredded cooked chicken
  • 1 can 15 oz creamed corn
  • 1 can 15 oz whole kernel corn, drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed corn chips
  • 1/2 cup milk
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Optional Add-ins

  • 1/2 cup diced bell peppers
  • 1/2 tsp smoked paprika
  • 1/4 cup diced jalapeños

Instructions
 

Preparation

  • Cook the chicken until fully done and shred it using two forks. Preheat your oven to 350°F.
  • In a large bowl, combine the shredded chicken, creamed corn, whole kernel corn, sour cream, milk, half of the shredded cheese, and salt and pepper. Mix well until combined.
  • Transfer the mixture into a greased 9x13-inch baking dish. Spread it evenly.
  • Sprinkle the remaining cheese over the mixture, followed by the crushed corn chips and chopped green onions.

Serving

  • Bake in the preheated oven for 30-35 minutes until the cheese is melted and bubbly. Allow to cool slightly before serving warm.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
