  • 3 cups butternut squash peeled and cubed
  • 2 cups canned black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 375°F. Toss the butternut squash cubes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized.
  • In a large mixing bowl, combine the roasted squash, black beans, cumin, chili powder, paprika, and half of the cheese. Mix well to combine.
  • Spread the salsa evenly on the bottom of a 9x13 inch baking dish. Layer the squash and bean mixture over the salsa. Top with the remaining cheese.

Cooking

  • Place the baking dish in the oven and bake for 20-25 minutes until the cheese is bubbly and golden brown.

Serving

  • Allow the casserole to cool for a few minutes before slicing. Serve warm, garnished with fresh cilantro and a dollop of sour cream if desired.
