Equipment

  • 1 9x13-inch baking dish lightly greased
  • 1 Large Skillet
  • 1 Mixing Bowl large

Ingredients

Cobbler Filling

  • 1 lb chicken breast diced
  • 4 cups cauliflower florets
  • 1 cup buffalo wing sauce
  • 8 oz cream cheese softened
  • 2 cups shredded cheddar cheese divided

Cobbler Topping

  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 cup unsalted butter cubed
  • 1/2 cup milk

Instructions

Preparation

  • In a large skillet over medium heat, cook the diced chicken until fully cooked and no longer pink. Set aside.
  • Steam the cauliflower florets until tender but still firm, about 5 minutes. Drain and set aside.
  • In a large mixing bowl, combine the cooked chicken, cauliflower, buffalo wing sauce, cream cheese, and 1 cup of shredded cheddar cheese. Stir until well blended.
  • In another bowl, mix the flour and baking powder. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.
  • Transfer the chicken and cauliflower mixture to a greased 9x13-inch baking dish. Spread the cobbler topping evenly over the filling. Sprinkle the remaining cheddar cheese on top.

Serving

  • Preheat the oven to 375°F. Bake the cobbler for 40 to 50 minutes, or until the top is golden brown and the cheese is bubbling.
  • Allow the cobbler to cool for at least 10 minutes before serving to let the flavors meld.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
