Equipment

  • 1 Baking Sheet
  • 1 Mixing Bowl large
  • 1 Potato masher

Ingredients

Main Ingredients

  • 4 large russet potatoes
  • 1 1/2 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Optional Add-Ins

  • 1/4 cup chopped green onions
  • 1/4 cup crumbled feta cheese
  • Paprika for garnish

Instructions

Preparation

  • Preheat oven to 400°F. Wash and scrub the potatoes, then pierce several times with a fork. Place directly on the oven rack and bake for 45-60 minutes until tender.
  • Steam broccoli florets until tender. In a mixing bowl, combine broccoli, cheese, sour cream, butter, salt, and pepper. Mix until well combined.
  • Cut each baked potato lengthwise. Scoop out the flesh into a bowl, leaving a thin shell. Mash the potato flesh and mix with the broccoli-cheddar filling. Fill the potato shells with the mixture.
  • Place the filled potatoes back on the baking sheet and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Serving

  • Serve the baked potatoes hot, garnished with additional cheese or green onions if desired. Enjoy as a main dish or alongside your favorite sides.

Storage

  • Allow leftovers to cool completely. Store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
