Preparation

  • Dice the onion and bell pepper. Mince the garlic cloves. Preheat the oven to 375°F.
  • In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.
  • Add diced onion, bell pepper, and minced garlic to the skillet. Sauté until vegetables are soft, about 5 minutes.
  • Stir in the cauliflower rice, salt, and pepper. Cook for an additional 5 minutes.
  • Transfer the mixture to a greased 9x13 inch baking dish. Spread cream cheese evenly over the top.
  • Sprinkle shredded cheddar cheese over the top of the casserole.
  • Bake in the preheated oven for 30 minutes, until cheese is bubbly and golden.

Serving

  • Allow to cool for 5 minutes before serving. Cut into slices and enjoy warm.
