  • 1 bell pepper chopped

Preparation

  • Chop the onion and bell pepper, mince the garlic, and cube the chicken breasts before starting the cooking process.
  • Place your large skillet over the camp stove or grill and heat the olive oil over medium heat.
  • Add the cubed chicken to the skillet, cooking until browned on all sides, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are tender, about 5 minutes.
  • Stir in the uncooked rice, ensuring it's well coated with the oil and vegetables. Pour in the chicken broth and bring to a boil.
  • Return the chicken to the skillet, cover, and reduce the heat to low. Simmer for 15 minutes, or until the rice is cooked through.

Serving
