  • 1 lb large shrimp peeled and deveined
  • 2 cups bell peppers sliced
  • 1 cup corn kernels
  • 1 cup andouille sausage sliced
  • 1 cup baby potatoes halved

Seasoning Mix

  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Peel and devein the shrimp. Slice bell peppers, sausage, and halve the potatoes. Combine all in a large mixing bowl.
  • Add olive oil, Cajun seasoning, garlic powder, onion powder, salt, and pepper to the bowl. Toss until all ingredients are well-coated.

Assemble Foil Packets

  • Cut four sheets of aluminum foil, approximately 12x12 inches. Distribute the shrimp mixture evenly among the sheets.
  • Fold the foil over the mixture, crimping the edges tightly to form a packet. Ensure there are no gaps for steam to escape.

Cooking

  • Preheat grill to medium-high or oven to 425°F. Place packets on the grill or baking sheet and cook for 15-20 minutes until shrimp are opaque.
