Ingredients
  

Blackened Fish

  • 4 skinless white fish fillets e.g., tilapia, catfish
  • 2 tbsp blackened seasoning
  • 2 tbsp olive oil

Avocado Salsa

  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • Juice of 1 lime
  • 1/4 cup cilantro chopped

Rice

  • 2 cups jasmine rice
  • 4 cups water or broth

Instructions
 

Preparation

  • Pat the fish fillets dry with paper towels. Coat them with blackened seasoning, pressing it into the fish on both sides. Heat olive oil in a large skillet over medium-high heat.
  • Place the seasoned fillets in the hot skillet. Cook for 3-4 minutes on each side until the crust is blackened and the fish is cooked through. Remove from the skillet and let rest.
  • Rinse the rice under cold water. Add rice and water or broth to a rice cooker or pot. Cook according to the rice cooker instructions or until the liquid is absorbed and rice is tender.
  • In a mixing bowl, combine diced avocados, cherry tomatoes, red onion, lime juice, and cilantro. Toss gently to combine and set aside.

Serving

  • Divide the rice among bowls. Top with pieces of blackened fish and a generous scoop of avocado salsa.
  • Garnish with additional cilantro or lime wedges if desired. Serve immediately for the best flavor and texture.

  • Keep the components in separate airtight containers in the refrigerator. Reheat the rice and fish before assembling.
