Ingredients
  

Buffalo Chicken

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese softened

Rice and Vegetables

  • 2 cups cooked white or brown rice
  • 1 cup bell peppers sliced
  • 1 cup carrots julienned
  • 1 tbsp olive oil

Toppings

  • 1/2 cup shredded cheddar cheese
  • 2 tbsp green onions chopped

Preparation

  • If not using pre-cooked chicken, cook chicken breasts in a slow cooker with a bit of broth on low for 4-6 hours. Shred the chicken once cooked.
  • In a mixing bowl, combine shredded chicken, buffalo sauce, and cream cheese. Stir until well mixed.
  • Cook rice according to package instructions in a rice cooker or saucepan. Fluff with a fork once done.
  • In a large skillet, heat olive oil over medium heat. Add bell peppers and carrots, sautéing until tender yet crisp, about 5-7 minutes.
  • Divide cooked rice among serving bowls. Top with buffalo chicken mixture and sautéed vegetables. Sprinkle shredded cheddar cheese on top.
  • Garnish each bowl with chopped green onions and any other desired toppings such as jalapeños or blue cheese crumbles.
  • Serve bowls warm. Enjoy as a standalone meal or with a side of salad or crusty bread.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave before serving.
