Ingredients
  

Filling

  • 4 large eggs
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp butter or oil
  • 1 cup cheddar cheese shredded
  • 1/2 cup salsa lightly drained

Assembly

  • 4 flour tortillas

Instructions
 

  • Whisk eggs with salt and pepper.
  • Soft scramble eggs and set aside.
  • Assemble quesadillas with cheese, eggs, and salsa.
  • Cook until tortillas are golden and cheese is melted.
  • Slice and serve warm.

Notes

Drain salsa if very watery. Reheat in a skillet for best texture.
