  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños
  • 1/4 cup chopped cilantro
  • 8 corn tortillas

Fish Taco Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp lime juice
  • 1 clove garlic minced
  • 1 tsp hot sauce

Instructions
 

Preparation

  • In a mixing bowl, combine lime juice, olive oil, garlic powder, cumin, paprika, salt, and pepper. Add the fish strips and toss to coat. Let marinate for 20 minutes.

Grilling

  • Preheat your Blackstone griddle to medium-high heat.
  • Place marinated fish strips on the hot griddle. Cook for 4-5 minutes per side, until fish is opaque and flakes easily with a fork.
  • While the fish is cooking, warm the tortillas on the griddle for about 1 minute on each side.
