Ingredients
  

Muffin Batter

  • 2 cups rolled oats
  • 2 eggs
  • 1 cup plain Greek yogurt
  • 1/2 cup milk
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F and prepare a muffin tin.
  • Mix eggs, yogurt, milk, sweetener, and vanilla in a bowl.
  • Combine oats, protein powder, baking powder, cinnamon, and salt.
  • Stir dry ingredients into wet ingredients and rest batter briefly.
  • Divide into muffin tin and bake until set.
