  • 0.5 cup grated Parmesan cheese
  • 0.25 cup breadcrumbs (preferably panko) For extra crunch.
  • 2 Tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Grease a baking dish with butter or cooking spray.
  • In a mixing bowl, combine the lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Whisk until well blended.
  • Place the tilapia fillets in the baking dish and pour the lemon mixture over them, ensuring all the fish is coated evenly.
  • In another bowl, mix the breadcrumbs with the melted butter and Parmesan cheese until crumbly.

Cooking

  • Sprinkle the breadcrumb mixture generously over each fillet, pressing down gently to adhere it.
  • Bake the tilapia in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork and the topping is golden brown.
  • Remove from the oven and let the fish rest for a couple of minutes. Garnish with chopped fresh parsley before serving.

Notes

For a crispier topping, broil the fish for an additional 1-2 minutes after baking, keeping a close eye. Feel free to swap tilapia for other white fish like cod or sole, adjusting cooking time as necessary. Leftovers make a fantastic salad topping or a filling for wraps.
