Ingredients
  

Yogurt Bars

  • 1 3/4 cups old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 1 cup plain Greek yogurt
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1/4 cup neutral oil or melted butter
  • 2 tsp vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions
 

  • Preheat oven to 375°F (190°C) and grease or line an 8x8-inch baking dish.
  • Whisk oats, flour, baking powder, and salt in a large bowl until evenly combined.
  • In another bowl, whisk yogurt, maple syrup, eggs, oil, and vanilla until smooth.
  • Add wet ingredients to dry ingredients and fold gently until just combined.
  • Fold in fresh blueberries carefully to keep most berries whole.
  • Spread batter evenly in the prepared dish and tap gently to settle.
  • Bake for 35 to 40 minutes until edges are lightly golden and center is set.
  • Cool completely before slicing into bars.

Notes

Allow bars to cool fully for best structure. Store refrigerated for up to 4 days or freeze for longer storage.
