Ingredients
  

Crumble Topping

  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter melted

Cheesecake Filling

  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • In a bowl, mix flour, brown sugar, and melted butter until crumbly. Set aside.
  • In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.
  • In a small bowl, toss apples with lemon juice, cinnamon, and sugar. Set aside.
  • Preheat oven to 350°F. Line a mini muffin tin with liners. Fill each cup with a spoonful of cheesecake filling, topped with apple mixture, and sprinkled with crumble.
  • Bake in preheated oven for 20-25 minutes or until set. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
