  • 4 boneless skinless chicken thighs
  • 2 apples sliced
  • 1 cup apple cider

Seasoning and Glaze

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon

Preparation

  • Season chicken thighs with salt, pepper, and cinnamon. Heat olive oil in a large skillet over medium-high heat.
  • Place the chicken thighs in the skillet and cook until golden brown on both sides, about 5 minutes per side. Remove from skillet and set aside.
  • Add butter to the skillet. Once melted, add the sliced apples and cook until they begin to soften, approximately 3 minutes.
  • Stir in the apple cider, Dijon mustard, and brown sugar. Bring to a simmer and let it reduce until thickened, about 8-10 minutes.
  • Nestle the chicken thighs among the apples in the skillet. Spoon the cider glaze over the chicken.
  • Reduce heat to low, cover, and let cook for another 10 minutes until the chicken is cooked through.
  • Transfer the chicken and apples to a serving platter. Drizzle with any remaining glaze from the skillet.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place in a skillet over medium heat with a splash of apple cider, warming until heated through.
