  • 1 pound fresh salmon, skin removed and diced
  • 1/2 cup breadcrumbs (or panko)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 teaspoon lemon zest
  • Salt & pepper, to taste
  • Cooking spray or olive oil for greasing

Preparation

  • Begin by preparing the salmon. Place the salmon fillet on a cutting board and dice it finely.
  • In a mixing bowl, combine the diced salmon, breadcrumbs, chopped onion, minced garlic, beaten egg, Dijon mustard, parsley, and lemon zest. Season with salt and pepper to taste.
  • Form the mixture into patties, about 2-3 inches in diameter, yielding about eight patties.

Cooking

  • Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  • Lightly spray the air fryer basket with cooking spray to prevent sticking.
  • Arrange the salmon patties in the air fryer basket in a single layer.
  • Cook the patties for 8-10 minutes, flipping halfway through for even browning.
  • Once done, remove the patties from the air fryer and let them rest for a couple of minutes.

Notes

Chop the salmon finely for best texture. Adding Old Bay seasoning or smoked paprika can enhance flavor. Let the mixture rest before forming patties. If too loose, add breadcrumbs. These patties freeze well and can be reheated in the air fryer.
