  • 3 cups all-purpose flour (plus extra for dusting) Use extra flour for dusting.
  • 1.5 teaspoons salt
  • 0.5 teaspoon active dry yeast
  • 1.5 cups warm water (about 110°F/43°C) Water should be warm but not hot.

Preparation

  • In a large mixing bowl, combine the flour, salt, and yeast, stirring gently with a wooden spoon.
  • Pour in the warm water gradually, mixing until no dry flour remains. Cover the bowl with a clean kitchen towel or plastic wrap and allow it to rise at room temperature for 12 to 18 hours.

Baking

  • After rising, turn the oven to 450°F (232°C). Place your Dutch oven (with the lid on) inside to preheat for about 30 minutes.
  • Dust a clean work surface with flour and carefully scrape the dough onto it. Shape it into a round ball.
  • Let it rest for about 30 minutes while the oven preheats fully. Remove the heated Dutch oven and place the parchment with the dough into it.
  • Cover with the lid and bake for 30 minutes. Remove the lid and continue baking for an additional 10 to 15 minutes until the loaf is deep golden brown.
  • Transfer the bread to a wire rack to cool for at least 30 minutes before slicing.

Notes

Use a kitchen scale for precise measurement. This bread tastes even better the next day and toasts beautifully.
